Food upcycling is an innovative, food sustainability effort aimed at using every part of a food item. In general, food upcycling helps people discover a whole new world of plants and their beneficial parts that were previously considered waste or weeds<\/p>\n<\/div><\/div><\/div><\/div><\/div>

n March and April of 2018, the first food upcycling training was taught in Nairobi. With food upcycling having such a huge impact on the environment and bringing in uses to what most would see as \u201ctrash,\u201d the avocado upcycling came to fruition through Food Upcycling Expert Evans Iro.<\/p>\n<\/div><\/div><\/div>

Being one of the most prominent fruits and exports in Kenya, it is highly sought out. With many consumers enjoying its delicious fruit, the rest of the avocado is seen as \u201ctrash\u201d and thrown out.<\/p>\n<\/div><\/div><\/div><\/div><\/div>

As it was Mr. Iro\u2019s final project for his food upcycling certification, he found innovative and sustainable ways to use the ripe avocado fruit and seed, which are taught as a part of the T.O.P. Kenya Food Upcycling curriculum.<\/p>\n<\/div><\/div><\/div>

He found ways in which we could use food items that would normally be discarded because they were not edible, such as blackened avocados and banana peels, to perform everyday tasks around the home.<\/p>\n<\/div><\/div><\/div><\/div><\/div>

Avocado Seed<\/strong><\/h2>\n

\u00a0<\/p>\n

The avocado seed can be turned into a powder that has many uses! The seed is full of: Vitamins K, C, B5, B6 and E, Potassium, Magnesium, Manganese, and Fiber.<\/p>\n

It is an antioxidant, antifungal, anti-cancerous, and antibacterial. It can also aid in weight loss, reducing blood sugar, reducing cholesterol, and relieving arthritis.<\/p>\n

The powder can be used in smoothies or any meal or it can be used externally as shampoo or a facial mask. For Mr. Iro, he made \u201ctrash to cash\u201d and sells his avocado powder in his community\u2019s market alongside his mother.<\/p>\n<\/div><\/div><\/div>

Overripe Avocado Fruit<\/strong><\/h2>\n

The avocado fruit, having very high levels of monosaturated fats, have beneficial uses for not only for consumption but for every day use. One of those is as a shoe polish. The oil from these fats can also make leather stay longer and give it a long lasting shine better than most shoe creams and polish.<\/p>\n

Avocados are usually thrown away once they start to blacken. This is because they are seen as no longer edible. Now, these blacked avocados can be used to clean your leather shoes.<\/p>\n

Keeping your leather shoes in tip top shape can be very expensive in our present economy, especially since the price of industrial shoe polish is very high. Avocado shoe polish is the natural and 100% non-toxic, unlike most commercially-sold polishes.<\/p>\n<\/div><\/div><\/div>
